Hershey's Special Dark Chocolate Layered Cheesecake Recipe

This Hershey's Special Dark Chocolate Layered Cheesecake recipe is one of the real official Hershey chocolate and dessert recipes. It uses two major ingredients from the Hershey chocolate factory. The Hershey's Cocoa is used in the baked dark chocolate layered cheesecake crumb crust. The Hershey's Special Dark Chocolate Chips are used to make the layers in the dark chocolate layered cheesecake filling. It is sometimes called triple chocolate cheesecake because of the three layers in the filling.

You can also use Kraft Philly brand cream cheese to bake a Philadelphia cream cheese dark chocolate chips layered cheesecake recipe or Philadelphia double chocolate cheesecake, although the Hershey chocolate factory did not specifically prescribe this Kraft foods ingredient.

The resulting dark chocolate cheesecakes will be a recipe you will want to bake again and again. It will always be a hit with family and guests.

Ingredients for Hershey's Special Dark Chocolate Layered Cheesecake Recipe

Hershey's Special Dark Chocolate Layered Cheesecake Crumb Crust:
1 1/2 cups vanilla wafer crumbs (about 45 wafers)
1/4 cup Hershey's Cocoa



1/2 cup powdered sugar
1/4 cup (1/2 stick) melted butter or margarine

Hershey's Special Dark Chocolate Layered Cheesecake Filling:
3 packages (8 ounces each) cream cheese, softened
2 cups (12 ounces package) Hershey's Special Dark Chocolate Chips, divided



3/4 cup sugar
4 eggs
1/4 cup heavy cream
2 teaspoons vanilla extract
1/4 teaspoon salt
1/2 teaspoon shortening (do not use margarine, butter, spreads or oil)

How to Make Hershey's Special Dark Chocolate Layered Cheesecake Crumb Crust

Stir the vanilla wafer crumbs, Hershey's Cocoa and powdered sugar together.
Stir in the melted butter or margarine.
Press mixture onto bottom and 1 1/2 inches up sides of 9-inch springform pan.
Heat oven to 350 degrees Fahrenheit.

How to Make Hershey's Special Dark Chocolate Layered Cheesecake Filling

Blend sugar and cream cheese in large bowl until smooth.
Beat in eggs, heavy cream, vanilla and salt gradually.
Continue beating until well blended.
Set aside.

Set aside 2 tablespoonfuls of chocolate chips.
Place the remaining chocolate chips in a large microwave-safe bowl.
Microwave at MEDIUM (50%) for 1 1/2 minutes.
Stir the melted chocolate.
Microwave at MEDIUM an additional 15 seconds at a time if necessary. Continue stirring after each heating until chocolate is melted completely when stirred.

Blend 1 1/2 cups cheesecake batter gradually into melted chocolate.
Spread 2 cups chocolate mixture onto prepared cheese cake crust.

Blend additional 2 cups plain cheesecake batter into remaining chocolate mixture.
Spread 2 cups of this mixture over first layer in springform pan.

Stir remaining cheesecake batter into remaining chocolate mixture.
Spread over second layer.



Bake dark chocolate layered cheesecake for 50 to 55 minutes or until center of cheese cake is almost set.
Remove cheese cake from oven to wire rack.
Loosen cheese cake immediately from side of pan with a knife.
Cool to room temperature.

Place shortening and the 2 tablespoonfuls of chocolate chips that were set aside in a small microwave-safe bowl.
Microwave at MEDIUM (50%) for 30 seconds.
Stir the mixture.
Microwave at MEDIUM an additional 10 seconds at a time if necessary, stirring after each heating, until chocolate is melted and smooth when stirred.
Drizzle over top of dark chocolate layered cheesecake.
Cover.
Refrigerate for several hours until cold.
