Bailey's Irish Cream Chocolate Chip Cheesecake Recipe

This is an easy Bailey's Irish Cream chocolate chip cheesecake recipe. If you are familiar with making mini cheesecakes, you could also modify it to a mini chocolate chip cookie dough cheesecake recipe.

Ingredients for Bailey's Irish Cream Chocolate Chip Cheesecake Recipe

Crust Bottom
2 cups Graham cracker crumbs
1/4 cup sugar
6 tablespoons butter, melted
Cheese Cake
2 1/4 pounds cream cheese
1 2/3 cups sugar
5 eggs
1 cup Bailey's Irish Cream
1 tablespoon vanilla extract
1 cup semi-sweet chocolate chips
Topping
1 cup whipping cream
2 tablespoons sugar
1 teaspoon instant coffee powder
Garnish
Chocolate curls

How to Make Chocolate Chip Cheesecake Crust

Preheat oven to 325 degrees Fahrenheit.
Coat a 9 inch springform pan with non-stick vegetable spray.
Combine 1/4 cup of sugar and Graham cracker crumbs in the springform pan.
Stir in the melted butter.
Press the mixture into bottom and 1 inch up the sides of the springform pan.
Bake chocolate chip cheesecake crust for about 7 minutes until light brown.

How to Make Chocolate Chip Cheesecake Filling

Beat cream cheese in a food processor.
Add eggs and 1-2/3 cups sugar and mix.
Blend in vanilla and Bailey's Irish Cream.
Sprinkle half of the chocolate chips over cheese cake crust.
Spoon the chocolate chip cheesecake filling into the crust.
Sprinkle with remaining chocolate chips.

Bake cheese cake for about 1 hour and 20 minutes, until puffed, springy in center and golden brown.
Cool cheese cake completely.
Beat 2 tablespoons sugar, coffee powder and whipping cream until peaks form.
Spread mixture over cooled cheese cake.
Serve cheesecake garnished with chocolate curls.
