Hershey Chocolate Raspberry Chips Cheesecake Recipe

This Hershey chocolate raspberry chips cheesecake recipe is not one of the real official Hershey chocolate and dessert recipes like the Hershey's Special Dark Chocolate Layered Cheesecake recipe for example. Instead it is a variation of Chocolate Raspberry Cheesecake Recipe using Hershey's chocolate raspberry chips as one of the substitute ingredients. In fact it also uses Kraft Philly brand cream cheese, so it could also be called Philadelphia cream cheese chocolate raspberry chips cheesecake recipe if you prefer Kraft foods to the Hershey chocolate factory. Anyway the result is a very rich baked cheesecake of chocolate and raspberry that will delight your taste buds.

Ingredients for Hershey Chocolate Raspberry Chips Cheesecake Recipe

Cheesecake Crust:
1/4 cup sugar
4 tablespoons butter, softened
2 cups chocolate wafers
Cheesecake Filling:
12 ounces Hershey's Chocolate Raspberry Chips, melted and cooled
1 1/2 pounds Philadelphia cream cheese, softened
3/4 cup sugar
3 large eggs
2 tablespoons melted butter
1/2 cup heavy cream

How to Make Hershey Chocolate Raspberry Chips Cheesecake Crust

Mix all ingredients - sugar, butter and chocolate wafers - completely.
Butter the sides and bottom of 9-inch springform pan.
Press crumb mixture about 2 inches up the sides and onto bottom of springform pan.
Place the cheese cake crust in a refrigerator to cool.

Blend sugar and cream cheese until smooth.
Add eggs, one at a time, blending thoroughly.
Add melted chocolate, mixing thoroughly.
Add cream and melted butter, mixing thoroughly.
Pour the cheese cake filling into the crust in the springform pan.



Preheat oven to 350 degrees Fahrenheit.
Bake chocolate raspberry chips cheesecake in preheated oven at 350 degrees Fahrenheit for at least 1 hour.

Well, this is a free easy chocolate raspberry cheesecake recipe with raspberry cheesecake topping. Chocolate raspberry cheesecake is made from strained raspberry preserves, melted chocolate, sugar, cream cheese and eggs baked on a cookie crumb crust. If you prefer you can substitute butter for margarine in this American recipe for chocolate raspberry cheesecake. Another variation of this cheesecake recipe is to use Hershey's chocolate raspberry chips. Yet another variation of this chocolate raspberry cheesecake recipe is to use Kraft Philly or Philadelphia brand cream cheese for a very rich baked cheesecake of chocolate and raspberry.

Ingredients for Chocolate Raspberry Cheesecake Recipe

1 1/2 cups creme-filled cookie crumbs *
2 tablespoons margarine, melted
32 ounces cream cheese, softened
1 1/4 cups sugar
3 large eggs
1 cup sour cream
1 teaspoon vanilla
1/3 cup strained raspberry preserves
6 ounces semi-sweet chocolate chips **
1/4 cup whipping cream
Notes:
* Finely crush 18 cream filled cookies to make the cookie crumbs.
** The 6 ounces of chocolate chips should be melted and cooled slightly.

How to Make Chocolate Raspberry Cheesecake Crust and Filling

Combine the margarine and cookie crumbs.
Press onto bottom of a 9-inch springform pan.
Combine sugar and 24 ounces of cream cheese in an electric mixer.
Continue mixing cream cheese and sugar at medium speed until well blended.
Add eggs, one at a time, beating well after each addition.
Blend in vanilla and sour cream.
Pour over cheese cake crust.
Combine remaining 8 ounces cream cheese and melted chocolate.
Continue mixing at medium speed on eletric mixer until well blended.
Add red raspberry preserves and mix well.
Drop rounded measuring tablespoonsfuls of chocolate cream cheese batter over plain cream cheese batter, but do not swirl.

Bake chocolate raspberry cheesecake at 325 degrees Fahrenheit for 1 hour and 25 minutes.
Loosen cheese cake from rim of springform pan.
Cool before removing rim of pan.
Melt chocolate pieces and whipping cream over low heat.
Continue stirring until smooth.
Spread melted chocolate cream over cheescake.
Chill cheese cake in a refrigerator.
Serve cheesecake garnished with additonal whipping cream and whipped raspberries. Add fresh mint leaves if desired.
